As the summer heats up, I’m always looking for lighter dishes to complement my outdoor smoking. This dish takes the traditional Italian favorite and twists it just a bit. Really though, the peaches completely overhaul the dish. Not only does the fruit add a depth of sweetness that balances out the other ingredients well, it also stands up better to a cigar than the tomatoes would have. Simple to put together and refreshing, the salad encompasses every taste you could want.
Peach Caprese Salad
1 ripe peach, pitted and sliced
6 slices of fresh mozarella
6 basil leaves
1 tsp. Balsamic Vinegar
2 tsp. Extra Virgin Olive Oil
Salt
Cracked Black Pepper
Arrange the slices of peach and cheese on two small plates as you choose. Tear basil over the top. Drizzle with vinegar and oil and season with salt and pepper.
